Locro

This is a traditional and popular stew that is eaten almost nationwide. Locro can be prepared with either wheat or corn, beans, chorizo, pork trotters and ears, and the traditional sweet fried sauce made with onions, tomatoes, pepper, and paprika. This sauce is added to the locro a few minutes before it is served.
